Neapolitan pizza is a traditional Italian pizza that originated in Naples, Italy, and is celebrated worldwide for its simplicity, authenticity, and rich cultural heritage. It is not just a dish but a symbol of Italian culinary tradition, recognized by UNESCO as an Intangible Cultural Heritage of Humanity.

A classic Neapolitan pizza is made using only a few high-quality ingredients: soft wheat flour, water, salt, yeast, San Marzano tomatoes, fresh mozzarella (usually mozzarella di bufala), fresh basil, and extra-virgin olive oil. The dough is prepared by hand and allowed to ferment slowly, which gives it a light, airy texture and a delicate flavor. It is stretched gently by hand, never rolled, to preserve the natural air bubbles that form during fermentation.

One of the most distinctive features of Neapolitan pizza is its thin, soft centre and puffy, slightly charred edges, known as the cornicione. The pizza is traditionally baked in a wood-fired oven at extremely high temperatures (around 430–480°C / 800–900°F) for about 60–90 seconds. This quick baking process creates a soft, foldable pizza with a slightly smoky aroma and perfectly balanced Flavors.

The two most famous traditional varieties are Pizza Margherita and Pizza Marinara. Pizza Margherita features tomato sauce, mozzarella, fresh basil, olive oil, and salt, representing the colours of the Italian flag. Pizza Marinara, one of the oldest versions, is topped with tomato sauce, garlic, oregano, and olive oil, without cheese.

Neapolitan pizza is known for its fresh, light, and natural taste, where no single ingredient overpowers the others. It is typically eaten fresh out of the oven with a knife and fork or folded slightly by hand. Unlike many modern pizzas, Neapolitan pizza is not overloaded with toppings, allowing the quality of the dough and ingredients to shine.
